The Chuck Shoulder Steak, also known as the Ranch Steak, derived from the Chuck primal, comes from the shoulder area. Generally lean, Chuck Shoulder Steak can be used as a black canvas for cooking. This steak is 3 in. wide, 5 in. long, and 1/2 in. thick in size. When tenderized through vinaigrette or lemon juice marinade, the steak is delicious prepared seared, grilled, broiled, and everything in between.
