Ingredients
- 1 bone-in Heritage Ham (7lbs)
- 1/2 cup Dijon mustard
- 1 cup brown sugar
- 1/4 cup bourbon
- 1/2 cup peach preserves
- 1/4 cup Crown Maple Bourbon Barrel Maple Syrup
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- Zest and juice of 1 orange
- Salt and freshly ground black pepper, to taste

- 2 hours and 30 minutes
Instructions
- Preheat smoker or oven to 325°F.
- Pat the ham dry. Score the surface in a shallow diamond pattern.
- Rub the entire ham with Dijon mustard.
- In a small bowl, mix brown sugar, cinnamon, cloves, nutmeg, salt, and pepper. Press onto ham to coat.
- In a saucepan, combine peach preserves, maple syrup, bourbon, orange zest, and juice. Simmer 10–15 min until slightly thickened.
- Place ham in a roasting pan with a rack or directly on smoker grates. Cook until internal temp reaches 130°F (about 1.5–2 hours).
- Begin glazing the ham every 15 minutes with the peach maple bourbon glaze.
- Continue cooking until internal temp reaches 140°F (about 30–45 more minutes).
- Remove from heat, tent with foil, and rest 15 minutes.
- Slice, serve, and drizzle with remaining glaze if desired.
